This quick evening snack takes 20 minutes to prepare and makes you feel like a gourmet chef!

Bruh-schetta!

Toast, butter, and jam… That was my staple quick evening snack when I was a kid. I’d eat any dish as long as there was no bitter gourd in it. My mother was truly a lucky woman to have a non-fussy eater like me. Unfortunately, I’m not as lucky. My children prefer variety in their food. Maybe it’s all the Masterchef episodes they watch, but they don’t hesitate to let me know how boring my dishes are sometimes. How it needs a little more flavour. How I should consider plating it better. The list goes on. But hey, I’m no Gordan Ramsay or Jamie Oliver to whip up interesting dishes every day. But I try nonetheless.

Of lately, I’ve been really into cooking dishes that are simple but have a  gourmet feel to it. Last week, I made a delicious evening snack that not only got my kids’ approval but also had me in and out of the kitchen in 20 minutes. I’ve got all the details for you. Just scroll down.

The recipe!

Ingredients for the topping

  • 2 medium-sized ripe tomatoes
  • 1 tbsp olive oil
  • Basil leaves
  • ½ onion
  • 3 cloves of peeled garlic
  • 1 tsp balsamic vinegar
  • Salt to taste
  • Chilli flakes
  • Pepper to taste
  • ½ tsp Italian seasoning

Ingredients for the bread

  • 1 loaf baguette
  • Olive oil
  • 2 cloves of crushed garlic

Quick evening snack recipe!

  • Chop the onions and tomatoes.
  • Slice the garlic cloves. Sautee it in olive oil for 30 seconds.
  • Add tomatoes, onions, and sauteed garlic into a bowl. Then add olive oil, salt, pepper, balsamic vinegar, chilli flakes, and Italian seasoning to the same bowl and mix well.
  • Let the mixture sit for ten minutes.
  • Slice the baguette into thick slices.
  • Mix olive oil and the crushed garlic in a bowl and brush the mixture on the baguette slices.
  • Grill or toast the bread till they achieve a light brown colour.
  • Plate the garlic baguette slices on a plate and layer each slice with a good portion of the tomato mixture.
  • Dress the slices with small basil leaves. If your kids avoid greens like the plague, I suggest chopping the basil leaves and adding them to the tomato mixture.

You can also grate some cheese on it if you want. My kids love feta cheese on their bruschetta.
