My kids can’t get enough of this refreshing summer salad!

The reaction I get from my kids every time I mention salad is definitely oscar-worthy. I don’t know what it is about a salad that puts them off. I think they get it from their dad who’d rather starve than eat salads. Personally, I love salads and try to get my family to at least tolerate it. No matter how many unique salad recipes I tried, my attempts to get them to like it was completely futile. I had almost given up hope when I came across an unusual salad recipe. I decided to give it a try, if not for them, at least for myself. Imagine my surprise when my family who usually don’t even go anywhere near salads actually reached out for second helpings of this one, my husband included. This refreshing summer salad has got my family hooked and I feel obliged to share the recipe with you!

Ingredients for the summer salad!

  • 6 cups of cubed watermelon
  • ½ cup chopped fresh mint leaves
  • 2 tsp lime juice
  • 5 tbsp olive oil
  • Salt
  • Pepper
  • ½ cup crumbled feta cheese

Instructions

  • Make sure there is no trace of the rind when you cut the watermelon into small cubes. You can also choose to remove the seeds.
  • Mix the olive oil, lemon juice, salt, and pepper in a bowl to prepare the dressing.
  • Place the watermelon cubes in a large bowl and add the dressing and chopped mint leaves to the bowl. Toss gently till the dressing covers all the cubes.
  • Crumble feta cheese over the salad and fold it gently.
  • Serve immediately.

This salad is best prepared and served fresh. If you like some heat in your salads, you can add some cayenne pepper or paprika to the salad.

I shouldn’t have been surprised that my kids and husband love this salad. After all, they love watermelon and cheese! Though this salad can be prepared any time of the year, I usually prefer to prepare it during summer and spring because of the availability of fresh watermelons.
